I have learned that there is a right time to quadruple the batch when baking.
I have also learned that there is a very wrong time to quadruple the batch when baking.
The right time to quadruple the batch is when I know what I am doing, I have made it before, and I will actually be able to use/freeze the extras of whatever I’m baking.
The wrong time to quadruple the batch is when I don’t know what I am doing, I haven’t ever made it before, and there is no way I will be able to use or freeze whatever I’m baking. Oh yeah, also when I am “experimenting.”
Case in point: while trying to perfect a clone of Mimi’s carrot raisin bread recipe, I found a recipe online to start from. I made a loaf. It was okay, but all it needed was an extra pinch of this and an extra dash of that.
